🛒 Ingredients (makes 2 burgers):

For the Chicken:

  • 2 skinless chicken breasts (or thighs, if you prefer)
  • 1 cup whole wheat breadcrumbs or panko
  • 1 egg, beaten
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp salt
  • Olive oil spray

For the Burger:

  • 2 whole grain burger buns
  • 2 slices reduced-fat cheddar (or your fave cheese)
  • 2 slices lean turkey bacon or nitrate-free bacon
  • Lettuce or baby spinach
  • Sliced tomato (optional)
  • Light mayo, Greek yogurt, or spicy sauce of choice

👩‍🍳 How to Make It:

  • Preheat your oven to 200°C (or air fryer to 180°C).
  • Butterfly and flatten the chicken breasts slightly so they cook evenly.
  • Mix spices with breadcrumbs in a bowl.
  • Dip chicken into the beaten egg, then into the spiced breadcrumb mix. Press well to coat.
  • Bake or air fry:
    • Oven: Place on a lined baking tray, spray lightly with olive oil, and bake for 20–25 mins, flipping halfway.
    • Air fryer: Cook for 15–18 mins until crispy and cooked through.
  • Cook the bacon in a pan until crisp, or bake alongside the chicken.
  • Toast the buns, then assemble your burger:
    • Bottom bun
    • Lettuce & tomato
    • Crispy chicken
    • Cheese slice (let it melt a bit!)
    • Bacon
    • Sauce of your choice
    • Top bun
