🥑 Healthy Breakfast Muffin Sandwich

Ingredients:
- 1 whole grain English muffin (look for high-fiber or sprouted grain options)
- 1 free-range egg
- 1 slice of reduced-fat cheddar cheese (or plant-based cheese)
- 1 turkey sausage patty (or plant-based sausage like Beyond or homemade)
- Handful of baby spinach or arugula (optional but adds greens!)
- 1 tsp olive oil or cooking spray
- Salt & pepper, to taste
Optional add-ons:
- Sliced avocado or smashed avocado
- Tomato slice
- A dollop of Greek yogurt or mustard for a tangy spread
Instructions:
- Toast the muffin
Split the English muffin and lightly toast it until golden brown. - Cook the egg
- Heat a non-stick skillet over medium heat.
- Lightly grease with olive oil or cooking spray.
- Crack the egg into a round mold (or use a mason jar lid for shape) and cook until set. Flip if desired.
- Season with salt and pepper.
- Cook the sausage patty
- In the same pan, cook the turkey or plant-based sausage patty according to package directions (or until browned and cooked through).
- Make.. the sandwich
- Bottom half of muffin
- Sausage patty
- Slice of cheese (let it melt slightly on the hot patty)
- Egg
- Spinach or other toppings
- Top half of muffin
